Hello Anglers, Well, we have finally turned the corner and our area waters are alive. Fishing is on fire right now and I for one could not be happier. The pics from this past month show some nice sunshine. February is usually a month to target sheepshead, trout, redfish and snook. Never do I remember having spanish mackerel on that list. We certainly had warmer weather than normal and our spring bite has arrived early. I hope that is not a hint that red-tide will be a summertime issue. We will worry about that later if it happens. March is usually the kick off month to our fishing season so to speak. We have our big outdoor show at the fairgrounds every year to get us started. It starts this Friday and goes thru the weekend. Some of you have asked me about my seminar schedule at the show this year, I have declined the opportunity to speak this year and will be there on friday as a consumer. I'm kinda looking forward to not having any responsibilities at the show this time around. If you don't already know I have resigned from the radio show after 5 years of service. Yes I do have a face for radio. Lets get to some fishing: the March menu will have just about everything the bay offers on the catch list. We will have a snook, redfish, trout, mackerel, kingfish, tarpon, and a shark bite as long as conditions cooperate. Those will be the most targeted fish. Sheepshead, grouper, grunts, flounder, and seabass will also be there for the taking but mostly as a by catch. Trout and mackerel are the hot bite right now but fishing in general will be good thru May. White bait will be the bait of choice. You gotta love a sardine! Remember: don't let your kid be the one that got away, take them fishing. I have had a few request for some split trips. If you will email me back a response with the dates that you are available I will put something together for you. I have a little over half of March already booked but should be able to find a day to get you out for an adventure. Below is a recipe for spanish mackerel, the picture of this is attached. My client and neighbor Dave has been kind enough to submit this for everyone to enjoy. Trust me, this plate was awesome. Simple Pan Seared Caribbean Jerk Mackerel Marinade small mackerel fillets in your favorite store bought Caribbean Jerk sauce for 24 hours. Sear fillets in a large pan over medium high heat for about 3 minuets on each side. Sprinkle with a light dusting of Cajun seasoning when cooked. Salt to taste.
